Looks like garlic will be early this year so here’s a roasted garlic recipe so that you can use your garlic as a spread. Roasting mellows the flavour.
Large heads of garlic
Salt and pepper
Preheat oven to 400 degrees F.
Cut off about ¼ inch of the tops of the garlic so that the cloves are exposed.
Place on a sheet of aluminum foil. Drizzle with olive oil and sprinkle with salt and pepper.
Wrap the garlic and place in heated oven. Depending on how big the heads are they may take 45 to 60 minutes. Garlic is done when centre clove is completely soft.
Cool slightly and press the bottom of the clove to push it out of its paper.
