Mayonnaise

Homemade Mayonnaise

  • 1 room temperature egg
  • 5 ml (1 tsp) vinegar
  • 1 ml ( ¼ tsp) salt
  • 1 ml ( ¼ tsp) pepper
  • 2 ml ( ½ tsp) dry mustard
  • 175 ml (2/3 c) oil

Combine egg, vinegar, salt, pepper and mustard in a blender.  With the blender running, start pouring a slow stream of oil into the mix until the oil has been all added and the mayonnaise is thick.  Word of warning – if you pour the oil too quickly, your mayonnaise may not thicken.
