Carrot Apple Cake

A quick dessert for a busy summer day. Carrots and apples go well together in this recipe.  Omit the drizzle if you don’t need the added sweetness. The cup of sugar may also be too sweet for your liking.  Feel free to add less.

Ingredients

50 ml (1/4 c) butter, softened

250 ml (1 c) sugar

5 ml (1 tsp) cinnamon

1 ml (1/4 tsp) nutmeg

5 ml (1 tsp) vanilla

250 ml (1 c) flour

5 ml (1 tsp) baking soda

250 ml (1 c) grated apple

250 ml (1 c) grated carrot

250 ml (1 c) raisins (optional)

lemon glaze (recipe follows)

Beat butter, sugar, spices and vanilla together.  Add dry ingredients, mixing to blend.  Mixture will be crumbly.  Stir in apple, carrot and raisins, if using.  Transfer to well-greased eight inch square cake pan, leveling mixture but not patting heavily.  Bake at 350 degrees F for about 45 minutes.  Drizzle glaze over warm cake and cool in pan before cutting.

Glaze:  Blend 125 ml (1/2 c) icing sugar, 5 ml (1 tsp) lemon juice and 5 ml (1 tsp) water.
