Rhubarb Squares

Rhubarb is bountiful at this time of year.  Tastes sort of like a buttery cake.

Ingredients

  • 100 ml (6 tbsp) butter
  • 2 eggs
  • 125 ml to 250 ml (½ to 1 c) sugar (I use 1/2 cup)
  • 5 ml (1 tsp) baking soda
  • 5 ml (1 tsp) vanilla
  • 1 ml (¼ tsp) cinnamon
  • 250 ml (1 c) flour
  • 500 ml (2 c) chopped rhubarb (or other firm fruit eg. apples)
  • 125 ml (½ c) chopped walnuts

       Beat together first seven ingredients.  Add rhubarb and nuts.  Scrape into greased 22 X 22 cm (9” X 9”) pan.  Bake at 350 F for 40 to 50 minutes.  Cool 15 minutes.
