Lazy Perogy Casserole

This recipe really simplifies my life. It’s quick and easy. Is a good second choice to real perogies and, of course, you can change up the ingredients to suit your taste buds. By choosing to leave the dish uncovered while baking, the noodles will get crispy so that it resembles fried perogies.


12 lasagna noodles
1000 ml (4 cups) mashed potato
500 ml (2 cups) shredded cheddar cheese
1 ml (¼ tsp) salt
.5 ml (1/8 tsp) pepper
125 to 250 ml (½ to 1 cup) butter
250 ml (1 cup) chopped onion

Cook noodles as directed on package. Drain. Mix together potato, cheese, salt and pepper. Melt butter in frying pan. Saute onions slowly until clear and soft. Coat the bottom of 22 X 23 cm (9 X 13 inch) pan with a thin layer of butter and onion mixture. Top with noodles. Layer ½ of the potato mixture onto noodles. Spread evenly. Repeat, ending with layer of noodles. Pour butter mixture evenly over noodles. Cover.

Bake 30 minutes at 350 degrees F. Let stand 10 minutes before cutting. Serve with sour cream.
