Berry Squares

A number of combinations are very good in this recipe.  My favourites are red currants with coconut and black currants with slivered almonds.  I find firmer berries are more suitable. 

Ingredients

  •        375 ml (1 ½ c) flour
  •        125 ml (½ c) brown sugar
  •        125 ml (½ c) butter
  •        1 ml (¼ tsp) salt
  •        2 beaten eggs
  •        125 ml (½ c) sugar
  •        75 ml (1/3 c) flour
  •        5 ml (1 tsp) baking powder
  •        125 ml (½ c) coconut (or nuts)
  •        250 to 500 ml (1 to 2 c) berries

        Bottom Layer:  Mix first 4 ingredients until crumbly.  Press in 20 X 20 cm (8” X 8”) pan.  Bake at 350 F for 8 - 10 minutes.  

        Top Layer:  Beat eggs.  Add remaining ingredients.  Mix well.  Spread over bottom layer.  Bake at 350 F for 25 to 30 minutes until firm in centre.  Cut when cool.  Will be chewy.
