Pumpkin Cookies

This is my favourite way to use up my frozen pumpkin.  I use the lessor amounts of sugar and have also substituted honey for the brown sugar which makes them soft and chewy. Kale Chips

Now that there’s an abundance of kale in my garden, I have to start getting creative with it.  These can be a good substitute for potato chips.  There are those who say there is no comparison but then again I never eat potato chips.  Watch the salt if you don’t like your food too salty.   Ingredients Kale Olive oil Salt Stem kale and cut in pieces.  Toss with oil and salt.  Bake at 275 degrees F  for 25 minutes turning half way.

Fresh Salsa

Garden produce is now in full swing so it’s time to start using it. This fresh salsa recipe is refreshing with tortilla chips or as a topping for a burrito. You can mix up the peppers depending on how hot you prefer your salsa. Ingredients 500 ml (2 c) finely chopped tomatoes 125 ml (1/2 c) finely chopped jalapeno, bell and/or other peppers 125 ml (1/2 c) finely chopped onion 15 ml (1 tbsp) vinegar 5 ml (1 tsp) sugar salt to taste finely chopped parsley or cilantro to taste In a mixing bowl thoroughly combine tomatoes, peppers and onion....

Chicken Enchilada Casserole

The kids were little when I started making this recipe.  Everyone liked it and  it reminded them of cream of chicken soup.  I may have this story wrong though because I don’t recall ever making cream of chicken soup.  Maybe it’s how they thought cream of chicken soup should taste.  That must be it! Carrot Apple Cake

A quick dessert for a busy summer day. Carrots and apples go well together in this recipe.  Omit the drizzle if you don’t need the added sweetness. The cup of sugar may also be too sweet for your liking.  Feel free to add less.
